Directions
-
Trim the lamb fillets of excess fat and sinew, then cut into 60g noisettes (medallions). Season generously with salt and pepper.
-
Prepare the artichokes by trimming the stems and tough outer leaves, then cook the hearts until tender. Drain and refrigerate to cool.
-
Peel and julienne the carrots, parsnips, and leeks into uniform thin strips.
-
In a saucepan, melt half the butter over medium heat. Add the julienned vegetables and sweat gently until just al dente. Season and set aside.
-
In a separate pan, add the lamb jus and the sprig of tarragon. Bring to a simmer and reduce by half until slightly thickened. Strain and keep warm.
-
Heat the olive oil and remaining butter in a large frying pan over high heat.
-
Sear the lamb noisettes for 2-3 minutes per side until browned on the outside but still pink inside. Remove from heat and rest briefly.
-
To plate, spoon a small amount of the reduced lamb jus onto the center of each plate.
-
Place a cooked artichoke heart on top of the jus, then position a lamb noisette on the artichoke.
-
Garnish with the sautéed julienned vegetables and serve immediately.
