Ingredients

Directions

  1. Using a paring knife, carefully scrape both flat sides of the cactus shoots to remove any remaining spines or thorns.
  2. Cut the cleaned cactus shoots into small squares and rinse them thoroughly under cold water.
  3. Place the cactus squares in a deep pan with enough water to cover them and boil until tender.
  4. Drain the boiled cactus well and set aside.
  5. Rinse the pan and return it to the stove, adding 1/2 cup of corn oil and heating over medium heat.
  6. Add the chopped onions and garlic to the hot oil and sauté for 10 minutes until softened and fragrant.
  7. Remove the pan from the heat and let the onion mixture rest for 10 minutes.
  8. Stir in the flour, warm water, and mild chili powder to the onion mixture.
  9. Return the pan to medium-low heat and stir constantly until the sauce thickens to a medium consistency.
  10. Add the cooked cactus squares to the sauce and simmer for an additional 15 minutes, stirring occasionally.
