Directions

  1. Cream shortening and sugar together until light and fluffy.
  2. Beat in molasses and egg.
  3. Combine flour, salt baking soda, spices.
  4. Stir dry ingredients gently into creamed mixture alternately with boiling water until just mixed, beginning and ending with dry ingredients.
  5. Spoon batter into a lightly greased 8x4 inch or 9x5 inch loaf pan.
  6. Bake in 350 F (177&# 194;°C) oven 40-45 minutes (check - could be less for larger pan) until tester inserted in center comes out clean.
  7. Cool in pan 10 min, remove and cool completely.
  8. Wrap tightly to store.
