Description

These Nutty Bean-Rice Burgers are a delightful twist on the classic veggie burger, offering a robust texture and deep flavor profile. By combining cooked soy or dry beans with nutty brown rice and ground sunflower seeds, you get a patty that is substantial enough to stand up to bold toppings. The addition of sweet pickle relish and soy sauce provides a tangy, umami-rich balance, while crumbled basil adds a fresh herbal note. These burgers are perfect for summer cookouts, healthy weeknight dinners, or potluck gatherings.

Directions

  1. Melt 1 tablespoon of butter in a large skillet over medium heat.
  2. Add the diced onion and celery to the skillet and sauté for 2 to 3 minutes until softened.
  3. In a large mixing bowl, combine the sautéed vegetables, cooked beans, cooked brown rice, ground sunflower seeds, shredded cheddar cheese, whole wheat flour, pickle relish, catsup, soy sauce, dried basil, beaten eggs, and black pepper.
  4. Mix all ingredients thoroughly until well combined.
  5. Taste the mixture and add salt to taste, mixing again to incorporate.
  6. Divide the mixture into 8 equal portions and shape each into a patty about 1/2 inch thick.
  7. Heat the remaining 1 tablespoon of butter in a large skillet over medium-low heat.
  8. Place the patties in the skillet and cook slowly, turning once, until well browned on both sides, about 15 minutes total.
  9. Transfer the cooked patties to a serving platter.
  10. Serve warm, garnished with sliced green onions and pickle slices if desired.
