Description

This old-fashioned apple butter is a labor of love that rewards patience with an incredibly rich, dark, and aromatic spread. Made primarily with Jonathan apples, this recipe relies on the slow, gentle heat of a crock-pot to break down the fruit into a velvety, jam-like consistency. The blend of cinnamon, allspice, and cloves infuses the sweet apple base with warm, comforting spice notes. A splash of Sauternes adds a subtle fruity complexity near the end of the cooking process. Perfect for spreading on toast, mixing with oatmeal, or serving alongside pork dishes, this homemade preserve captures the essence of autumn in every spoonful. It is an ideal project for fall harvest season and makes a wonderful gift for friends and family.

Ingredients

Directions

  1. Wash, core, and quarter the apples, leaving the skins on.
  2. Lightly oil the bottom of your crock-pot and combine the apple quarters with the apple juice.
  3. Cover and cook on the High setting for 6 to 8 hours, stirring approximately every 2 hours, until the apples are very soft.
  4. Remove the lid after 3 hours of cooking to allow the fruit and juice to reduce and cook down further.
  5. Mash the cooked apples thoroughly with a potato masher or immersion blender until smooth.
  6. Measure the sieved cooked fruit. For each pint of fruit, add 1 cup sugar, 1 tsp cinnamon, 1/2 tsp allspice, and 1/2 tsp cloves.
  7. Stir the spices and sugar into the mashed apples until fully combined.
  8. Add the Sauternes wine during the last hour of cooking to preserve its flavor.
  9. Continue cooking uncovered until the mixture reaches a thick, jam-like consistency.
  10. Ladle the hot apple butter into sterilized jars, leaving appropriate headspace.
  11. Process the jars in a boiling water bath according to standard canning guidelines to seal.
