Description

These Old-Fashioned Sticky Buns are the ultimate comfort food treat, featuring tender, pillowy dough wrapped in a rich filling of brown sugar, chopped walnuts, and golden raisins. The buns are baked in a deep roasting pan to create that signature sticky, caramelized crust that makes them irresistible. Perfect for weekend breakfasts, holiday brunches, or as a special dessert, they offer a warm, spiced flavor profile enhanced by optional cardamom. The combination of soft yeast bread and crunchy nuts provides a delightful textural contrast. While they require some time to rise, the process is straightforward, resulting in a homemade bakery-quality experience that brings warmth and sweetness to any gathering.

Ingredients

Directions

  1. In a large bowl, combine yeast, sugar, salt, cardamom (if using), and 3 cups of flour.
  2. In a 2-quart saucepan over low heat, warm the milk and 6 tablespoons of butter until very warm (125F to 130F). The butter does not need to melt completely.
  3. Using a mixer at low speed, gradually add the warm milk mixture and eggs to the dry ingredients, beating just until blended. Scrape down the bowl often with a rubber spatula.
  4. Increase mixer speed to medium and beat for 3 minutes.
  5. With a wooden spoon, stir in 4 cups of flour to form a soft dough.
  6. Turn the dough out onto a floured surface and knead until smooth and elastic, about 10 minutes. Add more flour (about 1/2 cup) as needed while kneading.
  7. Shape the dough into a ball, cover, and let rest for 15 minutes.
  8. Meanwhile, in a small saucepan over low heat, melt 6 tablespoons of butter.
  9. In a medium bowl, combine chopped walnuts, golden raisins, 1 cup packed dark brown sugar, 1/4 cup corn syrup, and 1/4 cup confectioner's sugar.
  10. Grease a 17x11 1/2-inch roasting pan. Pour the melted butter into the pan and swirl to coat the bottom and sides evenly.
  11. Roll the rested dough into a rectangle approximately 1/4-inch thick. Brush with any remaining melted butter if desired (optional, based on preference for richness).
  12. Sprinkle the nut and raisin mixture evenly over the dough.
  13. Roll the dough up tightly from the long side, starting with the short end, to form a log. Pinch the seam to seal.
  14. Cut the log into 20 equal slices and place them seam-side down in the prepared roasting pan.
  15. Cover and let rise in a warm place until doubled in size, about 1 to 1.5 hours.
  16. Preheat oven to 350F (175C).
  17. Bake for 30 to 35 minutes, or until golden brown and cooked through.
  18. Let cool in the pan for 5 minutes, then invert onto a serving plate to release the sticky topping.
