Description

This Onion Parmesan Bread is a comforting, homemade treat that elevates a simple meal into something special. The dough is soft and pillowy, enriched with milk and egg, while the filling offers a sweet-savory contrast from sautéed onions and sharp parmesan cheese. It has a golden, crisp crust and a tender crumb that pulls apart beautifully. Perfect served warm as a side dish for soups and stews, or as a delicious snack with olive oil for dipping.

Directions

  1. In a large bowl, dissolve active dry yeast in warm water.
  2. Add salt, soft margarine, beaten egg, scalded milk, and 2 cups of flour to the yeast mixture.
  3. Beat with a spoon until the mixture is combined.
  4. Gradually add remaining flour until the dough is stiff enough to handle.
  5. Turn dough out onto a floured surface and knead for 5 minutes, or until smooth and elastic.
  6. Place dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 1/4 hours, or until doubled in size.
  7. Meanwhile, prepare the filling by melting butter in a small saucepan over medium heat.
  8. Add chopped onions to the melted butter and sauté for about 5 minutes, until just tender.
  9. In a small bowl, combine parmesan cheese, poppy seeds, and garlic salt.
  10. Punch down the risen dough and place it on a floured work surface.
  11. Divide the dough into two equal pieces.
  12. Roll each piece into a 12x12 inch square.
  13. Spoon half of the onion mixture onto each square, spreading it evenly.
  14. Sprinkle the cheese and poppy seed mixture over the onions.
  15. Roll up each square tightly like a jelly roll, sealing the edges well.
  16. Place the loaves seam-side down on a greased French bread pan or baking sheet.
  17. Cover and let rise for 45 minutes, or until doubled in bulk.
  18. Preheat oven to 350°F (175°C).
  19. Bake uncovered for 25-30 minutes, or until golden brown.
  20. Remove from pan immediately and serve warm.
