Description

This vibrant Orange Sherbet-Fruit Mold is a nostalgic, no-bake dessert that balances the tartness of citrus with the sweetness of tropical fruits. The combination of orange and lemon gelatin creates a delicate, translucent setting that holds together chunks of pineapple, mandarin oranges, and ripe bananas. Folded into a softened orange sherbet base, the mixture becomes light and airy yet satisfyingly creamy. It is an elegant yet simple dish perfect for summer gatherings, potlucks, or as a refreshing finale to a heavy meal. The mold unmolds beautifully, offering a colorful presentation that delights the eye as much as the palate.

Ingredients

Directions

  1. Drain the pineapple chunks and mandarin orange segments thoroughly; cut in half if large.
  2. Peel the bananas, quarter them lengthwise, and slice into rounds.
  3. In a large bowl, combine the pineapple, mandarin oranges, and banana slices; set aside.
  4. In a medium saucepan, sprinkle the orange and lemon gelatin packets over the boiling water.
  5. Stir gently over low heat until the gelatin is completely dissolved.
  6. Remove the saucepan from heat and let the gelatin mixture cool slightly for 2 minutes.
  7. Add the softened orange sherbet to the warm gelatin mixture and stir until thoroughly blended and smooth.
  8. Gently fold the prepared fruit mixture into the sherbet-gelatin blend until evenly distributed.
  9. Rinse a 6-cup mold with cold water; drain well.
  10. Pour the fruit and sherbet mixture into the rinsed mold.
  11. Cover and chill in the refrigerator for at least 4 hours, or until firm.
  12. To serve, run a knife around the edge of the mold and dip the bottom in warm water for a few seconds.
  13. Invert the mold onto a cold serving plate and let it sit for a moment before lifting the mold away.
  14. Garnish with fresh orange slices and serve with reserved fruit juice or dressing if desired.
