Description

This comforting oven-baked dish combines tender cubes of beef stew meat with creamy navy beans, simmered slowly to perfection. The savory depth comes from a blend of bacon grease, tomato sauce, and aromatic spices like chili powder and basil. It’s a rustic, home-style meal that improves with time, making it ideal for busy weeknights or meal prep. Serve it hot with crusty bread to soak up the rich juices, or pair it with green vegetables for a balanced plate.

Ingredients

Directions

  1. Sort and rinse the navy beans thoroughly.
  2. Place beans and 6 cups of water in a large pot and bring to a boil.
  3. Simmer the beans for 2 minutes.
  4. Cover the pot, remove from heat, and let the beans stand for at least 1 hour to soften.
  5. Trim excess fat from the beef and cut into 1-inch cubes.
  6. Combine flour, salt, and pepper in a plastic bag; add beef cubes and shake to coat evenly.
  7. Heat bacon grease in a large skillet or Dutch oven over medium-high heat.
  8. Brown the coated beef cubes on all sides; drain off any excess fat.
  9. Drain the beans, reserving 2 cups of the soaking liquid.
  10. In a large oven-safe dish or pot, combine the browned beef, drained beans, reserved bean liquid, tomato sauce, chopped onions, mustard, chili powder, basil, minced garlic, and bay leaf.
  11. Stir well to combine all ingredients.
  12. Cover the dish tightly with a lid or aluminum foil.
  13. Bake in a 325°F (165°C) oven for 2 to 2.5 hours, or until the beef is tender and beans are cooked through.
