Description

These Overnight Caramel Sticky Rolls are the ultimate treat for weekend mornings. The secret lies in the overnight chill, which allows the flavors to meld and the dough to rise slowly, resulting in a tender, airy crumb. Baked directly in a pan of bubbling brown sugar and butter caramel, each roll emerges glistening with a sticky, sweet glaze and studded with crunchy pecans. The contrast between the soft, pillowy bread and the rich, gooey filling is irresistible.

Ingredients

Directions

  1. In a large bowl, mix the flour, granulated sugar, salt, and yeast.
  2. Add the warm milk, softened margarine, and the egg.
  3. Beat on low speed for 1 minute, scraping the bowl frequently.
  4. Beat on medium speed for 1 minute, scraping the bowl frequently.
  5. Stir in enough remaining flour to make the dough easy to handle.
  6. Turn the dough onto a lightly floured surface.
  7. Knead for about 5 minutes or until smooth and elastic.
  8. Place the dough in a greased bowl and turn to grease the top.
  9. Cover and let rise in a warm place for about 1-1/2 hours or until double in size.
  10. While dough is rising, heat the brown sugar and margarine to boiling in a saucepan, stirring constantly.
  11. Remove from heat and stir in the corn syrup.
  12. Pour the caramel mixture into an ungreased 13x9x2 inch rectangular pan.
  13. Sprinkle the pecan halves evenly over the caramel in the pan.
  14. Punch down the risen dough.
  15. Flatten the dough with hands or a rolling pin into a 15x10 inch rectangle on a lightly floured surface.
  16. Spread the dough evenly with the softened margarine.
  17. In a small bowl, mix the chopped pecans, granulated sugar, brown sugar, and the cinnamon.
  18. Sprinkle the pecan-sugar mixture evenly over the margarine-coated dough.
  19. Roll up the dough tightly, beginning at the 10-inch side.
  20. Pinch the edge of the dough into the roll to seal.
  21. Stretch and shape the roll until it is even.
  22. Cut the roll into eight 1-1/4-inch slices.
  23. Place the slices slightly apart in the prepared pan.
  24. Wrap the pan tightly with heavy-duty aluminum foil.
  25. Refrigerate for at least 12 hours but no longer than 48 hours.
  26. Preheat oven to 350 degrees F (177°C).
  27. Bake for 30 to 35 minutes or until golden brown.
  28. Immediately invert the pan onto a heatproof tray or serving plate.
  29. Let stand for 1 minute so the caramel will drizzle down over the rolls.
  30. Remove the pan and serve warm.
