Description

This Overnight French Toast transforms simple Italian bread into a luxurious breakfast treat. By soaking the slices in a mixture of eggs, skim milk, and vanilla overnight, the bread absorbs the custard completely, resulting in a tender, cake-like interior with a golden, crisp exterior. The homemade cinnamon syrup adds a glossy, aromatic finish that ties the dish together with warm spice notes. It is an ideal make-ahead meal for leisurely weekend brunches or busy mornings, offering a comforting, indulgent flavor profile without the hassle of last-minute prep. Serve it warm for the best texture and aroma.

Ingredients

Directions

  1. In a medium bowl, whisk together the egg, egg whites, skim milk, sugar, vanilla, cinnamon, and baking powder until well blended.
  2. Place the Italian bread slices in a large, shallow baking dish.
  3. Pour the egg mixture evenly over the bread slices and turn them to coat completely.
  4. Press a piece of wax paper directly onto the bread to keep it submerged, then cover the dish tightly with plastic wrap.
  5. Refrigerate the dish overnight to allow the bread to soak up the custard.
  6. In a small saucepan, combine sugar, corn syrup, cinnamon, and 1/4 cup water.
  7. Bring the syrup mixture to a boil over medium-high heat, stirring constantly.
  8. Boil for 2 minutes, then remove from heat and stir in evaporated skim milk.
  9. Let the syrup cool slightly and transfer to a small pitcher.
  10. Heat 1 teaspoon of oil and 1/2 teaspoon of butter in a 12-inch nonstick skillet over medium-high heat.
  11. Add four of the soaked bread slices to the skillet.
  12. Cook until golden brown on both sides, approximately 2 to 3 minutes per side.
  13. Transfer the cooked French toast to a platter and keep warm in a low oven.
  14. Cook the remaining bread slices in the same manner, using the remaining 1 teaspoon of oil and 1/2 teaspoon of butter.
  15. Serve the French toast warm, topped with the cinnamon syrup.

Note

The cinnamon syrup can be stored, covered, in the refrigerator for up to 1 week. Reheat gently if desired before serving.

Using day-old Italian bread works best as it absorbs the custard without falling apart.

If you prefer a richer flavor, you can substitute half of the skim milk with whole milk or cream.
