Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. Drain oysters, reserving the liquid. Set oysters aside.
  3. In a medium saucepan, melt 2 tablespoons of butter over medium heat.
  4. Add 2 tablespoons of flour and stir continuously to form a roux, cooking until smooth and light brown.
  5. Add chopped green onions to the roux and cook for 2-3 minutes until softened.
  6. Gradually whisk in 3/4 cup of reserved oyster liquid and 1/2 cup dry white wine.
  7. Simmer the mixture for 10 minutes, stirring occasionally, until slightly thickened.
  8. In a small bowl, beat 4 egg yolks with 1 cup of cream until well combined.
  9. Slowly temper the egg mixture by whisking in a small amount of the hot oyster sauce, then pour the entire egg mixture back into the saucepan.
  10. Add chopped oysters, fresh parsley, lemon juice, cayenne pepper, and salt to taste.
  11. Cook gently for 3 minutes, stirring carefully until the mixture thickens slightly. Do not boil.
  12. Divide the mixture evenly among individual casseroles or ramekins.
  13. Top each serving with buttered, salted bread crumbs.
  14. Bake for 15-20 minutes until hot and bubbly and the topping is golden brown.

Note

Ensure the oysters are fresh and clean. Rinse briefly if necessary, but do not over-rinse as you want to preserve their natural flavor.

When tempering the eggs, always add the hot liquid slowly to the egg mixture to prevent curdling. Stir constantly during this process.

For the breadcrumb topping, toss plain breadcrumbs with softened butter and a pinch of salt for best results.

This dish is best served immediately while hot and creamy. Leftovers can be refrigerated for up to 2 days but may lose some texture upon reheating.

If you prefer a spicier kick, increase the amount of cayenne pepper to your liking.
