  1. Drain the oysters, reserving 3/4 cup of the oyster liquor.
  2. Wash the sweetbreads in cold water and let them stand in cold water for 20 minutes.
  3. Drain the sweetbreads thoroughly.
  4. Combine the sweetbreads and lemon slices in a saucepan.
  5. Cook the sweetbreads covered in boiling salted water for 30 minutes.
  6. Drain the sweetbreads and cover them with cold water to cool.
  7. When cool enough to handle, remove any connecting membrane from the sweetbreads and cut them into 1-inch pieces.
  8. Combine the drained oysters and cut sweetbreads in a mixing bowl.
  9. Sprinkle the mixture with 1/2 teaspoon salt, 1/4 teaspoon pepper, and 1/4 teaspoon ground mace.
  10. Melt 1/4 cup butter in a small saucepan over medium heat.
  11. Blend 1/4 cup flour with 1/2 teaspoon salt.
  12. Slowly stir the flour mixture into the melted butter, then gradually stir in the cream and reserved oyster liquor.
  13. Cook the sauce, stirring constantly, over medium heat until it is smooth and thickened.
  14. Stir the oyster and sweetbread mixture into the thickened sauce.
  15. Pour the mixture into a 1 1/2-quart casserole dish.
  16. Bake at 375&# 194;°F (191°C) for 25 minutes or until bubbling and hot.
