Ingredients

Directions

  1. Preheat the oven to 250 degrees F (120 degrees C).
  2. Place the unpeeled garlic cloves in a small oven-proof dish.
  3. Cut the butter into pieces and place them over the garlic.
  4. Pour the vegetable oil over the garlic and butter.
  5. Cover the dish tightly with foil.
  6. Bake for 2 to 3 hours, or until the garlic is very soft and tender.
  7. Remove from the oven and allow the garlic to cool completely in the butter-oil mixture.
  8. Carefully peel off the skins from the garlic cloves; discard skins.
  9. Set aside the peeled, soft garlic cloves.
  10. Reserve the remaining garlic-infused butter in the refrigerator for later use.
  11. Drain the oysters, reserving the liquid juice separately.
  12. Combine the reserved oyster juice with the heavy cream in a saucepan.
  13. Simmer the mixture over medium heat until it reduces to 1 1/2 cups.
  14. Season the reduced cream with salt and white pepper to taste.
  15. Preheat the oven to 425 degrees F (220 degrees C).
  16. Place 4 oysters and 2 roasted garlic cloves into each of 8 small oven-proof ramekins.
  17. Pour the hot cream sauce over the oysters and garlic, ensuring they are covered.
  18. Bake for 15 minutes, or until the oysters are plump and the sauce is bubbling.
  19. Top each serving with a small piece of the reserved garlic butter.
  20. Serve immediately.

Note

The roasted garlic can be prepared ahead of time and stored in the refrigerator for up to a week. This makes assembling the final dish much quicker for last-minute entertaining.

Ensure the garlic is fully cooled before peeling to avoid burns, as the cloves will be extremely hot and soft after roasting.

Do not overcook the oysters in the final baking stage, as they can become tough. They are done when they curl slightly at the edges and the cream is simmering.

For a variation, you can add a splash of dry white wine to the cream reduction for extra depth of flavor.
