Note
The roasted garlic can be prepared ahead of time and stored in the refrigerator for up to a week. This makes assembling the final dish much quicker for last-minute entertaining.
Ensure the garlic is fully cooled before peeling to avoid burns, as the cloves will be extremely hot and soft after roasting.
Do not overcook the oysters in the final baking stage, as they can become tough. They are done when they curl slightly at the edges and the cream is simmering.
