Directions
-
Soak the rice noodles in warm water for 20-25 minutes until they are flexible and soft but still firm.
-
Drain the noodles thoroughly in a colander and set aside.
-
Peel and devein the shrimp, leaving tails intact if desired.
-
In a small bowl, mix the fish sauce, 1/4 cup sugar, 1/4 cup vinegar, and paprika until the sugar dissolves. Set aside.
-
Slice the green onions diagonally into 1-1/2 inch pieces.
-
Heat a wok over high heat and add the vegetable oil, swirling to coat the surface.
-
Add the chopped garlic and stir-fry until light golden.
-
Add the shrimp and stir-fry until pink and cooked through.
-
Add the drained noodles to the wok and toss lightly to coat with oil and distribute the shrimp and garlic.
-
Pour in the fish sauce mixture and bring to a rapid boil, gently folding the noodles.
-
Reduce heat to medium and boil, folding frequently until the noodles have absorbed the liquid.
-
Lift the noodles to one side of the wok and pour a little oil along the empty side.
-
Crack an egg into the oil, break the yolk, and immediately cover it with the noodles.
-
Repeat on the opposite side with the second egg.
-
Allow the eggs to cook undisturbed until set and almost dry.
-
Gently fold the eggs into the noodles using a lifting and folding motion until well distributed.
-
Add the green onions and toss quickly and gently to combine without breaking the noodles.
-
Cook for about 2 minutes until the onions are tender.
-
Serve the Pad Thai over a bed of bean sprouts, topped with ground chilies, ground peanuts, and a squeeze of lime.
