Description

This classic Pad Thai delivers a perfect harmony of sweet, sour, and savory flavors in every bite. The dish features silky broad rice noodles stir-fried with succulent shrimp and tender chicken breast, creating a hearty and protein-packed meal. Aromatics like garlic and fresh lime juice brighten the profile, while a touch of tomato ketchup and sugar provides the signature tangy-sweet sauce. It is an ideal choice for weeknight dinners when you crave restaurant-quality Thai food at home.

Directions

  1. Soak the broad rice noodles in warm water for 20 minutes until softened, then drain and set aside.
  2. In a small bowl, combine the fish sauce, lime juice, sugar, tomato ketchup, and red chili flakes to create the sauce. Set aside.
  3. Heat a wok or large skillet over high heat and add the vegetable oil.
  4. Add the chopped garlic and stir-fry for 10 seconds until fragrant.
  5. Add the shrimp and chicken breast to the wok, stirring constantly until cooked through, about 3 to 4 minutes.
  6. Push the meat to the side of the wok, pour in the beaten eggs, and scramble until just set.
  7. Add the drained noodles to the wok and toss well to combine with the meat and eggs.
  8. Pour the reserved sauce over the noodles and cook, stirring constantly, until the noodles are soft, tender, and fully coated.
  9. If the noodles appear dry, add up to 1/4 cup of water to loosen the mixture.
  10. Stir in the bean sprouts, green onions, and toasted peanuts, and fry for one more minute until heated through.
  11. Taste and adjust seasoning with more lime juice or chili flakes if desired.
  12. Serve immediately, garnished with coriander sprigs, lime wedges, extra bean sprouts, and fresh chilies if using.
