  1. Cut the halibut into bite-size cubes.
  2. Season the halibut cubes and shrimp with salt and freshly ground white pepper.
  3. Heat olive oil in a large paella pan or wide skillet over medium heat.
  4. Add the prosciutto and chorizo, cooking until browned and crispy.
  5. Stir in the chopped tomatoes, saffron, oregano, and basil. Cook for 5 minutes until the tomato mixture reduces and thickens.
