Description

This authentic Paella Valenciana combines saffron-infused rice with tender chicken, mussels, shrimp, and chorizo sausage. The dish is finished with fresh peas and green beans for a colorful and hearty meal. It is a perfect centerpiece for family dinners or special occasions.

Ingredients

Directions

  1. Scrub the mussels in cold water; discard any that do not close when tapped.
  2. Heat the oil in the paella pan and
  3. fry the chicken over medium
  4. heat until well browned on all sides, about 10-12 minutes;
  5. remove and keep warm.
  6. Add pork or ham and brown lightly;
  7. add onion, green pepper, garlic, tomatoes and seasoning;
  8. cook , stirring occasionally, until the vegetables are tender and all liquid has evaporated; lift out with a slotted spoon.
  9. Add the rice to the pan and
  10. cook , stirring, until hot and coated with remaining oil;
  11. add water and saffron liquid and bring to a
  12. boil .
  13. Remove from the
  14. heat and put chicken, green pepper mixture, sausage slices, peas, beans, mussels and shrimp on top of rice.
  15. Bring back quickly to a
  16. boil and
  17. simmer on top of the stove or
  18. bake in a pre-heated 350~ oven for 20-25 minutes or until all liquid is absorbed and the mussels have opened.
  19. Let the paella stand in a warm
  20. place for 5 minutes for the flavors to
  21. blend ; adjust seasoning and
  22. serve immediately.
