  1. Pat the chicken pieces dry with paper towels and season generously with salt and pepper.
  2. Heat the olive oil in a large sauté pan over medium-high heat.
  3. Add the chicken pieces, skin side down, and the peeled garlic cloves to the pan.

  12. Pour off all but 2 tablespoons of the fat from the pan.
  13. Add the remaining 1/4 cup of chicken stock to the pan.
  14. Cook over medium heat, scraping up any browned bits from the bottom of the pan.
  15. Increase the heat to high and reduce the liquid by half until it is slightly thickened.
  16. Pour the reduced pan sauce over the chicken and garlic.
