Pancit Guisado
Description
Pancit Guisado is a beloved Filipino comfort food that combines chewy rice noodles with a savory medley of ingredients. This hearty dish features tender chicken, pork, and fresh shrimp, stir-fried with crisp green beans, shredded cabbage, julienned carrots, and celery. The flavors are deeply savory, enriched by a broth made from boiling the meats, and balanced with soy sauce and fish sauce (patis). It is a vibrant, colorful meal that is perfect for family gatherings, fiestas, or a satisfying weeknight dinner.Directions
-
Boil the chicken and pork in 1 1/2 cups of water for 15 minutes until cooked through.
-
Remove the meats from the broth. Reserve the broth.
-
Once cool enough to handle, shred the chicken, discarding the bones, and cut the pork into thin slices. Set aside.
-
Heat oil in a wok or large saucepan over medium heat.
-
Sauté the sliced onion and crushed garlic until fragrant and softened.
-
Add the shredded chicken, sliced pork, and shrimp to the wok.
-
Stir in the soy sauce and patis (fish sauce).
-
Cook until the shrimp turns pink and opaque.
-
Remove the meat and shrimp mixture from the wok and set aside on a plate.
-
In the same wok, add the green beans, cabbage, carrots, and celery.
-
Pour in 1 cup of the reserved broth.
-
Season with salt and pepper to taste.
-
Stir-fry the vegetables for 2 minutes until just tender-crisp.
-
Remove 1 cup of the cooked vegetables from the wok and set aside for garnish.
-
Add the drained rice sticks to the remaining vegetables in the wok.
-
Stir gently over low heat to combine. If the noodles appear too dry, add a little more reserved broth.
-
Mix most of the reserved meat and shrimp mixture back into the noodles.
-
Season the entire mixture to taste with additional salt, pepper, or soy sauce if needed.
-
Warm the mixture through completely.
-
Transfer the Pancit Guisado to a serving platter.
-
Garnish with the reserved vegetables, remaining meat, sliced hard-boiled eggs, and sliced scallions.
-
Serve immediately with lemon wedges, extra patis, and soy sauce on the side.
