Description

This elegant panfried quail recipe transforms a classic game bird into a sophisticated yet approachable main course. The quail is seasoned simply with thyme, salt, and pepper, then seared in butter until the skin is deeply golden and crisp. The real magic happens in the pan sauce: fresh white grape juice is reduced with the flavorful browned bits and topped with sweet Virginia ham matchsticks. The result is a perfect balance of savory, salty, and subtle sweetness. Ideal for date nights or special family dinners, this dish feels luxurious but comes together quickly. Serve with roasted root vegetables or simple mashed potatoes to soak up the delicious sauce.

Ingredients

Directions

  1. Crush 1 cup of white grapes in a mortar and pestle, then press through a sieve or vegetable mill to extract approximately 1/3 cup of fresh grape juice.
  2. In a small bowl, combine 2 teaspoons salt, 1/2 teaspoon freshly ground black pepper, and 1 teaspoon dried thyme leaves, crushing the thyme slightly with your fingertips.
  3. Pat 8 split and flattened quail birds dry with paper towels.
  4. Sprinkle both sides of the quail evenly with the salt, pepper, and thyme mixture.
  5. Melt 1/2 cup (1 stick) of unsalted butter in a large skillet over medium heat until it foams and just begins to brown.
  6. Place the quail in the skillet skin-side down.
  7. Sprinkle 1/2 cup of Virginia ham, cut into matchsticks, over the quail.
  8. Cover the skillet and cook for 3 to 4 minutes, until the skin is golden brown and crisp.
  9. Turn the quail birds over and continue cooking covered until the juices run clear, about 4 minutes longer.
  10. Remove the pan from the heat and let the quail rest, covered, for about 10 minutes.
  11. Transfer the quail to a serving platter and sprinkle the ham from the pan over the birds.
  12. Pour off the excess fat from the skillet, leaving the browned bits.
  13. Add the fresh grape juice to the hot skillet and bring to a boil.
  14. Cook for 1 minute, scraping up the browned bits from the bottom of the pan to deglaze.
  15. Pour the hot grape sauce over the quail and serve immediately.

Note

If fresh white grapes are unavailable, you can use white grape juice from the store or even water for a milder sauce.

Ensure the quail is cooked through; the juices should run clear when pierced with a knife.

For a richer sauce, finish with a small knob of cold butter after deglazing.

Virginia ham adds a sweet, smoky element; if unavailable, regular smoked ham or prosciutto can be used.
