  1. Preheat the oven to 350F (175C).
  2. In a large bowl, combine the ground lamb, chopped onion, parsley, mint, pine nuts, lemon juice, olive oil, oregano, salt, and pepper. Mix thoroughly with your hands until all ingredients are well incorporated.
  3. Wash the grape leaves and remove the tough stems if necessary.
  4. Lay a grape leaf flat on a clean surface, vein-side up.
  5. Place approximately 3 ounces of the lamb mixture in the center of the leaf.
  6. Fold the bottom of the leaf over the filling, then fold in the sides, and roll tightly towards the top to encase the mixture completely.
  7. Repeat the rolling process until all the meat mixture is used.
  8. Line the bottom of a large baking dish with about 10 unwrapped grape leaves to prevent sticking.
  9. Arrange the stuffed grape leaves in the dish, packing them tightly together in a single layer.
  10. Pour enough water into the dish to just cover the stuffed leaves.
  11. Cover the dish with foil and bake for 1 hour, or until the leaves are tender and the meat is cooked through.
