Description

These classic Parker House rolls are the ultimate comfort food, featuring a tender, pillowy interior and a rich, buttery exterior. Made with simple pantry staples like flour, yeast, milk, and shortening, they come together with just a bit of patience for rising. The signature fold in each roll creates a unique texture that holds melted butter perfectly. Ideal for Thanksgiving dinners, Sunday suppers, or as a side for hearty stews, these homemade rolls bring a nostalgic, homemade warmth to any table. They are soft, slightly sweet, and irresistible fresh from the oven.

Ingredients

Directions

  1. Dissolve compressed yeast in lukewarm water in a large bowl and let stand until foamy, about 5 to 10 minutes.
  2. Add sugar, cooled scalded milk, salt, and 1/4 cup of the flour to the yeast mixture. Beat until smooth.
  3. Stir in the melted shortening and enough of the remaining flour to make a stiff dough.
  4. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, adding more flour as needed to prevent sticking.
  5. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled in size, about 1 hour.
  6. Punch down dough and turn out onto a lightly floured surface. Divide dough into 12 equal pieces.
  7. Roll each piece into a 3-inch circle. Fold each circle in half and press edges together with the tines of a fork.
  8. Place rolls close together in a greased baking pan. Cover and let rise until nearly doubled, about 45 minutes.
  9. Preheat oven to 375&# 194;°F (190ðC).
  10. Bake for 12 to 15 minutes or until golden brown.
  11. Brush immediately with melted butter and serve warm.

Note

Store leftover rolls in an airtight container at room temperature for up to 2 days, or freeze for longer storage. Reheat in a warm oven before serving.

If using active dry yeast instead of compressed yeast, dissolve it in the lukewarm water with a pinch of sugar. If using instant yeast, mix it directly with the dry ingredients.

While this recipe calls for melted shortening, you can substitute melted butter for a richer flavor. Note that butter contains water, which may slightly alter the dough texture.

Dough is ready when it is smooth, elastic, and no longer sticks to your hands. If it is too sticky, add flour one tablespoon at a time. If it is too dry and crumbly, add water one teaspoon at a time.
