Description

This Mediterranean appetizer features Pinto beans, soaked 7/8 c Hot water, Water 1/2 c Chopped onion, Bay leaf 1 tablespoon Olive oil, Garlic cloves. It delivers aromatic, well-seasoned taste, a pleasant kick of heat. Ideal for parties, potlucks, or as a starter before the main course. Ingredients

Directions

  1. mashed -- 1 c hot water 1 ts Salt 2 tb Mirin sauce 1 ts Marjoram 1 tb Soy sauce 1 ts Oregano 1/4 ts Black pepper 1 c TVP granules or flakes 1 ts Mace 1 tb Ketchup
  2. Combine beans, water, bay leaf & garlic in a large pot.
  3. Bring to a boil & cook for 70 to 80 minutes till tender.
  4. Remove bay leaf & drain beans.
  5. Stir in salt, marjoram & oregano.
  6. Combine TVP, hot water & ketchup.
  7. Set aside.
  8. Saute onion in olive oil till soft.
  9. When mushrooms have soaked for 15 minutes, remove & slice into 1 inch strips about 14 inch wide.
  10. Set aside.
  11. Combine beans, onion & TVP mixture in a food processor along with mirin, soy sauce, pepper & mace.
  12. Blend till smooth.
  13. Fold in the mushroom strips.
  14. Pack mixture into a lightly oiled 1-quart mold.
  15. Cover with foil, place in a pan of hot water & bake at 350F (177ðC) for 1 hour.
  16. Remove from oven.
  17. Place a plate on top of pate & weight down till the pate becomes firm.
  18. Let cool in the fridge.
  19. Turn out onto a plate to serve.
  20. Serve as a spread on thin slices of melba toast or crackers.
