Description

This vibrant pasta dish combines tender farfale with fresh asparagus and the deep, rich flavor of sun-dried tomatoes. The smoky notes from the mozzarella cheese pair beautifully with the bright acidity of the tomatoes, creating a harmonious balance of textures and tastes. It is an ideal choice for a light yet satisfying weeknight dinner or a springtime lunch. The preparation is straightforward, allowing the high-quality ingredients to shine without excessive fuss. Serve it warm for a comforting meal or chilled for a refreshing picnic option.

Ingredients

Directions

  1. Trim the woody ends from the asparagus and cut the spears into 1-inch diagonal pieces.
  2. Soak the dried tomato strips in 1 cup of warm water for 3-5 minutes until they begin to soften.
  3. Drain the tomatoes, reserving the soaking liquid.
  4. Heat about 5 inches of water to a rolling boil in a large saucepot.
  5. Add the asparagus pieces to the boiling water and cook for 3 minutes until tender but still crisp.
  6. Remove the asparagus with a slotted spoon and set aside in a bowl.
  7. In the same pot of boiling water, cook the farfale pasta according to package directions until al dente.
  8. While the pasta cooks, heat 1 tablespoon of olive oil in a skillet over medium heat.
  9. Add the chopped onion and sauté for 5 minutes until softened.
  10. Reduce heat to low, add the finely chopped garlic, and sauté for 3 minutes until fragrant.
  11. Stir in the reserved tomato liquid, drained tomatoes, asparagus, fresh thyme leaves, and salt.
  12. Cook the vegetable mixture for 5 minutes to meld the flavors.
  13. Drain the cooked pasta and return it to the pot.
  14. Toss the pasta with the remaining 1 tablespoon of olive oil.
  15. Place the pasta on a serving platter and top with the tomato-asparagus mixture.
  16. Sprinkle with the cubed smoked mozzarella cheese.
  17. Serve immediately.

Note

To serve cold, allow the pasta to cool to room temperature, cover, and refrigerate.

If using dried thyme, use 1 teaspoon instead of fresh leaves.

Ensure the dried tomatoes are thoroughly drained to prevent the dish from becoming too watery.

Smoked mozzarella adds a distinct flavor profile; if unavailable, regular mozzarella can be substituted, though the smoky note will be lost.
