Ingredients

Directions

  1. Wash the chard thoroughly, remove the tough stems, and cut the leaves crosswise into 1-inch ribbons.
  2. In a large saucepan or sauté pan over medium heat, toast half of the sunflower seeds until lightly browned and fragrant, about 2-3 minutes.
  3. Transfer the toasted seeds to a food processor or nut grinder and grind until very fine.
  4. Reserve the remaining half of the sunflower seeds for garnish.
  5. Heat the canola oil in the same pan over medium heat.
  6. Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
  7. Add the minced garlic and cook for 1 minute until fragrant.
  8. Add the peeled fresh tomatoes, tomato paste, ground sunflower seeds, fresh oregano, fresh basil, salt, and pepper to the pan.
  9. Bring to a simmer and cook for about 15 minutes, stirring occasionally, until the sauce has thickened and the flavors melded.
  10. While the sauce simmers, steam the prepared chard until tender but still bright green, about 5 minutes.
  11. Bring a large pot of salted water to a boil. Cook the linguine until al dente according to package directions.
  12. Drain the pasta and transfer it to a large serving platter.
  13. Spoon the tomato sauce over the pasta and toss gently to combine.
  14. Toss the steamed chard into the pasta mixture.
  15. Top with the reserved whole sunflower seeds and serve immediately.

Note

If fresh peeled tomatoes are not available, you can substitute with one 28-ounce can of crushed or whole peeled tomatoes with their juice.

Any long, thin pasta shape such as spaghetti, fettuccine, or angel hair can be used in place of linguine.

Toasting the sunflower seeds enhances their nutty flavor; be careful not to burn them as they can go from toasted to bitter quickly.

For a richer sauce, you can blend a small portion of the cooked tomatoes before adding the ground seeds.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of water if the sauce thickens too much.
