Description

This comforting Pasta Fagioli is a classic Italian staple that delivers deep, savory flavors in every spoonful. The dish centers on creamy white beans simmered with sweet onions, aromatic garlic, and fresh basil, creating a rich and satisfying broth. Small tubetti pasta absorbs the flavorful liquid, making each bite substantial yet light enough for a cozy weeknight dinner. It's the perfect meal for chilly evenings or when you crave something nourishing and home-style.

Directions

  1. If using dried beans, soak them overnight in a large pot with twice as much water as beans.
  2. Drain the soaked beans, add fresh water to cover them, and bring to a boil.
  3. Reduce heat and simmer the beans until tender, about 1.5 hours, ensuring water level remains above the beans. Stir occasionally.
  4. While beans cook, heat olive oil in a frying pan over medium heat.
  5. Add chopped onion and sauté until translucent.
  6. Add minced garlic and fresh basil leaves, sautéing for 1-2 minutes while stirring constantly.
  7. Stir in the flour and cook for one minute to remove the raw flour taste.
  8. Gradually add 1/2 cup water, stirring until the mixture thickens slightly.
  9. Add tomato paste and stir until fully dissolved into the onion mixture.
  10. Remove the pan from heat and pour the onion mixture into the pot of cooked beans.
  11. Add water to the bean mixture to achieve your desired soup consistency.
  12. Season with salt, black pepper, and crushed red pepper to taste, stirring to combine.
  13. Simmer the soup over low heat for 15 minutes, stirring occasionally to blend flavors.
  14. In a separate pot, cook the pasta according to package directions until al dente, about 4-5 minutes.
  15. Drain the pasta and rinse briefly with cool water to stop cooking, then set aside.
  16. To serve, place a portion of pasta in the bottom of each soup bowl.
  17. Ladle the hot bean mixture over the pasta.
  18. Mix gently and garnish with fresh parsley before serving.
