Ingredients

Directions

  1. Place the peas and 3 cups of cold water in a saucepan.
  2. Bring to a simmer over medium heat and cook for 15 minutes until peas are very tender.
  3. Pass the pea mixture through a sieve or food mill to create a smooth puree, discarding any skins.
  4. Return the puree to the saucepan over low heat.
  5. In a separate small saucepan, gently heat the milk with the sliced onions until warm but not boiling.
  6. Stir the butter and flour into the pea puree, cooking for 1-2 minutes to remove the raw flour taste.
  7. Slowly pour in the warm milk and onion mixture, stirring constantly to prevent lumps.
  8. Add the sugar, salt, and pepper to taste.
  9. Simmer gently for 5 more minutes until slightly thickened and heated through.
  10. Serve immediately while hot.

Note

For a richer flavor, you can use vegetable broth instead of water for simmering the peas.

If you prefer a completely smooth texture, remove the onion slices from the milk before adding it to the soup, or strain the final soup through a fine-mesh sieve.

This soup thickens as it cools. Add a splash of milk or water when reheating to reach your desired consistency.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
