  1. Combine 1 1/2 cups of the flour and yeast in a large mixer bowl.
  2. In a saucepan, heat milk, butter, sugar, and salt just until the mixture is warm (115 to 120°F) and butter is almost melted, stirring constantly.
  3. Pour the warm milk mixture into the flour mixture. Add eggs. Beat with an electric mixer on low speed for 1/2 minute, scraping the bowl.
  4. Beat for 3 minutes on high speed.
  5. Using a spoon, stir in the remaining flour. Cover and let rest for 10 minutes.
  6. Spoon batter into a well-greased 6-cup savarin mold or ring.
  7. Cover and let rise in a warm place until nearly doubled in size, about 40 minutes.
  8. Bake in a 350°F oven for 25 to 35 minutes.
  9. Cool in pan for 5 minutes; transfer to a wire rack over waxed paper.
  10. While the cake cools, prepare the Savarin Syrup: In a saucepan, combine peach nectar and sugar. Bring to a boil; remove from heat. Stir in rum.
  11. With a fork, prick the top of the warm ring at 1-inch intervals.
  12. Gradually drizzle the warm Savarin Syrup over the ring until all syrup is absorbed. Let stand for 1/2 hour.
  13. Prepare the Peach Glaze: In a saucepan, heat and stir the peach jam over low heat until melted. Strain.
  14. Spoon the peach glaze over the soaked cake.
  15. To serve, fill the center of the ring with desired fruit.
  16. Prepare Crème Chantilly: In a mixer bowl, combine whipping cream, powdered sugar, and vanilla. Beat until soft peaks form.
  17. Spoon crème chantilly onto slices if desired.

Note

Storage: This cake is best served fresh but can be stored covered at room temperature for up to 24 hours.

Substitutions: If you prefer a non-alcoholic version, omit the rum from the syrup and add an extra tablespoon of peach nectar.

Variations: Feel free to mix different fruits for the center filling based on seasonal availability.
