Preheat oven to 350F (177C). Lightly grease an 8x8x2 3/4 inch springform pan.

Sift flour, baking powder, and salt onto waxed paper; stir in the finely chopped walnuts.

Beat eggs in a medium bowl with an electric mixer at high speed until frothy.

Gradually beat in sugar and continue mixing at high speed until the mixture is very thick and creamy, at least 5 minutes.

Stir water and vanilla into the egg mixture.

Gently fold in the flour mixture until just combined.

Pour batter into the prepared pan and bake at 350F (177C) for 35 minutes, or until the center springs back when lightly touched.

Cool in pan on a wire rack for 5 minutes. Loosen cake around sides, release and remove ring, then loosen from bottom and remove from pan.

Cool cake completely on the wire rack.

Cut the cooled cake horizontally into 3 thin layers.

Drain peaches, reserving the syrup. Combine 3 tablespoons of the reserved peach syrup with the cream sherry in a small bowl.

Brush the sherry syrup mixture over each cake layer.

Whip heavy cream until soft peaks form. Spread a layer of whipped cream over the bottom cake layer, followed by a layer of drained peach slices.

Repeat layering with the second cake layer, cream, and peaches. Top with the third cake layer.

Frost the top and sides of the cake with remaining whipped cream. Garnish with halved walnuts.
