Description

Indulge in this decadent no-churn ice cream loaf that combines the classic flavors of chocolate, peanut butter, and banana. This dessert is perfect for potlucks or special occasions, offering a creamy texture with crunchy cookie crumbles and chewy peanut butter cups. The layers of chocolate and vanilla ice cream create a visually stunning presentation, while the banana slices add a fresh, natural sweetness. Easy to assemble with store-bought ice cream, this recipe requires no ice cream maker, just a loaf pan and some freezer time. Serve with a drizzle of hard-shell chocolate for an extra touch of luxury.

Ingredients

Directions

  1. Remove the vanilla and chocolate ice cream from their containers and place them in two separate large bowls.
  2. Let the ice cream stand at room temperature for 15-20 minutes to soften slightly, stirring occasionally until scoopable.
  3. While the ice cream softens, place the chocolate sandwich cookies in a closable plastic bag.
  4. Crush the cookies with a rolling pin or meat tenderizer until coarse.
  5. Coarsely chop the peanut butter cups with a knife or kitchen scissors.
  6. Slice the banana into thin rounds.
  7. Spoon half of the crushed cookies into the bottom of a 9x5 inch loaf pan, pressing down gently to form an even layer.
  8. Spread half of the softened chocolate ice cream over the cookie layer.
  9. Stir the chopped peanut butter cups into the softened vanilla ice cream.
  10. Spoon the vanilla-peanut butter mixture over the chocolate ice cream layer, pressing down lightly with the back of a spoon to remove air pockets.
  11. Sprinkle the remaining crushed chocolate cookies evenly over the vanilla layer.
  12. Stir the sliced bananas into the remaining softened chocolate ice cream.
  13. Spoon the banana-chocolate mixture over the cookie layer, filling the pan to the top.
  14. Smooth the top surface with the back of a spoon.
  15. If desired, sprinkle the chopped nuts over the top.
  16. Cover the loaf pan tightly with plastic wrap and freeze for at least 4 hours, or until firm.
  17. To serve, immerse the loaf pan in warm water for 10-15 seconds (being careful not to get water on the ice cream).
  18. Invert the pan onto a serving platter and lift off to release the ice cream loaf.
  19. Drizzle with ice cream hard-shell topping.
  20. Let stand at room temperature for 15 minutes before slicing with a knife warmed in hot water.

If you don't have an ice cream hard-shell topping, you can drizzle with melted chocolate or hot fudge sauce.

Store leftovers in the freezer wrapped tightly in plastic wrap and foil for up to 2 weeks.
