Description

These Pear Tarts are a sophisticated yet approachable dessert that balances flaky, buttery puff pastry with a rich, nutty almond cream. The natural sweetness of ripe, thinly sliced pears is highlighted by the earthy depth of ground almonds and a hint of amaretto. Topped with a glossy, warm caramel sauce made from brown sugar and butter, each bite offers a delightful contrast in textures and flavors. Perfect for a cozy weeknight treat or an impressive addition to a dinner party, these tarts are easy to assemble and bake quickly. The fresh mint garnish and dusting of confectioners sugar add a finishing touch that elevates the presentation, making this a reliable and delicious choice for any occasion.

Ingredients

Directions

  1. Make the almond cream: In the bowl of an electric mixer or with a wooden spoon, beat the softened butter and sugar together until light and fluffy.
  2. Add the egg yolks and beat until well combined, then mix in the amaretto or almond extract.
  3. Stir in the ground almonds and flour until evenly mixed to form a thick paste.
  4. Make the caramel sauce: In a small saucepan, combine the brown sugar, unsalted butter, and heavy cream.
  5. Bring the mixture to a boil and boil vigorously for 2 minutes, then remove from the heat. Cover and keep warm.
  6. Preheat the oven to 400&# 194;°F (200ðC).
  7. On a lightly floured surface, roll out the puff pastry to a 1/8-inch thickness.
  8. Using a plate or cardboard circle as a template, cut four 7-inch circles from the pastry with a sharp knife.
  9. Spread a layer of almond cream in the center of each pastry circle, leaving a 1-inch border around the edge.
  10. Fan the thinly sliced pears out from the center of each tart, covering the almond cream but keeping the border visible.
  11. Lightly beat the remaining egg yolk with a fork and brush it onto the pastry border, being careful not to let it drip onto the cut edges.
  12. Bake the tarts for about 20 minutes, until the edges are golden and the pastry is fully baked.
  13. Remove from the oven and allow to cool for 5 minutes.
  14. Garnish each tart with a sprig of mint and a light sprinkle of confectioners sugar.
  15. Serve warm, drizzled with the warm caramel sauce.

Note

To make ground almonds: Freeze whole or sliced blanched almonds, then process them in a blender in short bursts, scraping down the sides as necessary, until evenly ground. Do not over-process or allow them to get warm, otherwise they will turn into nut butter.

Store any leftover caramel sauce in an airtight container in the refrigerator for up to one week. Reheat gently before serving.
