Description

This Pear Tea Ring is a delightful twist on traditional fruit breads, offering a moist crumb loaded with chewy dried pears, raisins, and figs. The combination of whole wheat flour and warm cinnamon creates a hearty, comforting texture that pairs beautifully with a hot cup of tea or coffee. Soaking the dried fruits in brandy or apple sauce beforehand ensures every bite is bursting with deep, complex flavors. This versatile ring is wonderful fresh from the oven but improves with age, making it an excellent make-ahead dessert or gift. Its simple to prepare using pantry staples, resulting in a rustic yet elegant treat that brings home-style warmth to any gathering.

Ingredients

Directions

  1. Combine the dried pears, raisins (or currants), figs, walnuts, 2 cups of water, and brandy (or apple sauce) in a large bowl.
  2. Cover and let the mixture stand overnight or for at least 3 hours to soften the fruits and nuts.
  3. In a small bowl, dissolve the active dry yeast in 1/4 cup of warm water (110-115F). Let stand for 5-10 minutes until foamy.
  4. Add the vegetable oil, sugar, and cinnamon to the yeast mixture and stir to combine.
  5. Drain the soaked fruit and nut mixture, reserving any excess liquid if necessary, and blend it into the yeast mixture.
  6. Stir in enough whole wheat flour to make a stiff dough, starting with 3 3/4 cups and adding more if needed.
  7. Beat the dough well until smooth and elastic.
  8. Grease a 10-inch tube pan or Bundt pan. Spoon the dough into the pan.
  9. Cover and let rise in a warm place for 1 to 1 1/2 hours, or until the dough has almost doubled in size.
  10. Preheat oven to 400F (200C). Bake for 30 to 40 minutes, or until a wooden toothpick inserted into the center comes out clean.
  11. Cool in the pan for 10 minutes.
  12. Remove from the pan and cool completely on a wire rack.

Note

Storage: When cooled thoroughly, wrap tightly in aluminum foil or place in an airtight container. Store in a cool, dry place for several weeks. The flavor improves after resting for at least 3 days before serving.

Substitutions: For a vegan version, ensure the yeast is vegan (most are) and use unsweetened apple sauce instead of brandy. You can also swap half the whole wheat flour for all-purpose flour for a lighter texture.

Tip: If the dough seems too sticky, add flour one tablespoon at a time. If it is too stiff, add a teaspoon of water. The dough should be firm but manageable.
