Pfefferkuchen
Description
Pfefferkuchen is a classic German spice cake known for its dense, moist texture and warm, aromatic flavor profile. This traditional treat features a rich blend of honey, brown sugar, and whole wheat flour, infused with cinnamon, cloves, and a hint of rum. Unlike dry gingerbread, this version stays soft and chewy, especially when stored properly. It is perfect for holiday gatherings, winter afternoons, or pairing with strong coffee or tea.Directions
-
Preheat oven to 350°F (175°C).
-
In a small microwave-safe bowl, combine honey, brown sugar, butter, and cold coffee. Microwave on high for 30-45 seconds, stirring once, until melted and smooth. Let cool slightly.
-
In a large mixing bowl, whisk together whole wheat flour, baking powder, cinnamon, ground cloves, and salt.
-
Make a well in the center of the dry ingredients and add the egg, almond oil, rum, and cooled honey mixture.
-
Stir gently with a spatula until just combined. If the dough is too thick to drop slowly from a spoon, add more cold coffee, one teaspoon at a time, until desired consistency is reached.
-
Grease a baking sheet thoroughly. Spread the dough evenly onto the sheet, aiming for a thickness of about 1 cm (1/2 inch). Use a wet spatula to smooth the surface.
-
Bake for 18-20 minutes, or until the top is set and lightly golden.
-
While baking, mix powdered sugar and hot water to form a smooth, thin glaze.
-
Immediately upon removing from the oven, brush or drizzle the glaze evenly over the hot cake.
-
Let cool completely before cutting into rectangles or squares.
