Description

This classic curing recipe transforms tough cuts of beef or venison into tender, flavorful corned meat using a traditional salt, saltpeter, and molasses brine. The process draws out moisture while infusing deep savory notes and a hint of sweetness from the molasses. Ideal for making your own deli-style corned beef brisket or cured venison roast, this method requires patience but yields exceptional results. The brine penetrates the muscle fibers, ensuring even flavor distribution and a desirable pink hue from the curing salt. Perfect for holiday roasts, Reuben sandwiches, or slow-braised dishes, this homemade cured meat offers superior quality and texture compared to store-bought versions.

Ingredients

Directions

  1. Cut the meat into pieces weighing between 4 and 6 pounds.
  2. Prepare a clean barrel or large non-reactive container and spread a layer of salt on the bottom.
  3. Rub each piece of meat thoroughly with a mixture of salt and pepper.
  4. Place the meat in the barrel in layers, covering each layer with a generous amount of salt.
  5. Ensure the top layer of meat is completely covered with salt.
  6. Let the meat stand in the salt overnight.
  7. In the morning, prepare the brine by dissolving the salt, saltpeter, molasses, and baking soda in 2 gallons of water, stirring until the salt is fully dissolved.
  8. Test the brine strength by placing a raw egg in it; if it floats, the brine is ready, otherwise add more salt.
  9. Pour the brine over the salted meat in the barrel, adding more water if necessary to completely submerge the meat.
  10. Place a clean dish or plate over the meat to keep it submerged and weigh it down with a heavy object.
  11. Store in a cool place and allow to cure for 2 to 3 weeks.

Note

For 100 lbs of meat, double all ingredient quantities. Adjust brine volume accordingly to ensure meat is fully covered.

Use only food-grade saltpeter (sodium nitrite) for curing. Ensure all equipment is thoroughly cleaned and sanitized before use to prevent contamination.

The curing time may vary depending on the thickness of the meat and ambient temperature. Thicker cuts may require longer curing times.

Once cured, the meat can be smoked, boiled, or roasted. Store unused brine in a sealed container in the refrigerator for up to a week for future batches.
