  1. Melt butter in a large stockpot over medium heat.
  2. Add chopped leeks, onions, garlic, and butternut squash to the pot.
  3. Sauté vegetables for 2 to 3 minutes until slightly softened.
  4. Pour in half of the pale ale.
  5. Cover the pot and let it cook for 5 minutes.
  6. Pour in the chicken stock and bring the mixture to a boil.
  7. Reduce heat to low and simmer until the squash is tender and easily pierced with a fork, about 20-25 minutes.
  8. While the soup simmers, rinse the fresh basil leaves and pat them dry.
  9. Finely slice the basil leaves and set aside for garnish.
  10. Tie the remaining basil stems together with kitchen string or toothpicks.
  11. Add the bundled basil stems to the simmering soup.
  12. Continue simmering for another 5 minutes to infuse flavor.
  13. Remove and discard the bundle of basil stems.
  14. Use an immersion blender to puree the soup until smooth. Alternatively, carefully blend in batches using a countertop blender.
  15. Stir in the remaining half of the pale ale.
  16. Add most of the shredded cheddar cheese and stir until melted and incorporated.
  17. Season with salt and pepper to taste.
  18. Ladle the hot soup into heated bowls.
  19. Garnish with the reserved sliced basil leaves and remaining shredded cheddar cheese.
