This comforting dish transforms humble dried pinto beans into a rich, savory main course. Slow-cooked with diced ham, sweet onions, and bell peppers, the flavors meld beautifully over time. The beans become creamy and tender, absorbing the salty, smoky essence of the ham. It&# 226;ÂÂs a perfect weeknight meal that rewards patience with deep, satisfying taste. Ingredients

Directions

  1. Rinse the dried pinto beans thoroughly under cold water, picking out any debris.
  2. Place the beans in a large pot and cover with 10 cups of water.
  3. Bring the water to a boil over high heat and boil vigorously for 10 minutes.
  4. Reduce heat to low, cover the pot, and simmer until the beans are tender, which takes about 2 to 3 hours.
  5. Check the pot every 30 minutes and add more hot water if the level drops below the beans.
  6. Once the beans are tender, add the chopped onion, bell pepper, and diced ham to the pot.
  7. Add enough water to cover the ingredients by about 1 inch.
  8. Season with salt and pepper to taste.
  9. Bring the mixture back to a boil, then reduce heat and simmer uncovered for 30 minutes to blend flavors.

Note

You can substitute canned beans for dried beans to save time. Use approximately 6 cups of cooked canned beans (about 48 oz total) instead of the dried beans. Skip the boiling and initial simmering steps; simply add the canned beans along with the vegetables and ham, then simmer for 30 minutes.

For a richer flavor, you can add a bay leaf during the simmering process and remove it before serving.

This dish tastes even better the next day as the flavors continue to meld. Store leftovers in an airtight container in the refrigerator for up to 4 days.
