Directions

  1. Pat the catfish fillets dry with paper towels.
  2. In a shallow dish, mix the flour, salt, pepper, and paprika.
  3. Dredge the catfish fillets in the seasoned flour mixture, shaking off any excess.
  4. Heat the vegetable shortening in a large, heavy skillet over medium-high heat.
  5. Add the fillets to the skillet and cook for 3-4 minutes per side until golden brown and crisp.
  6. Remove the fillets from the skillet and set aside on a plate.
  7. In the same skillet, sauté the chopped garlic for 1 minute until fragrant.
  8. Add the whole tomatoes to the skillet and cook for about 2 minutes, breaking them up slightly with a spoon.
  9. Remove the tomato chunks with a slotted spoon and set aside, leaving the sauce in the skillet.
  10. Add the frozen spinach to the tomato sauce in the skillet and cook until heated through and wilted.
  11. In a small bowl, blend the sour cream, lemon juice, and 1 tablespoon of the grated Parmesan cheese.
  12. Spoon the spinach mixture onto serving plates or a platter.
  13. Arrange the cooked catfish fillets on top of the spinach.
  14. Spoon the sour cream mixture over the fillets.
  15. Top the fillets with the reserved tomato chunks.
