Description

This Plum Tart is a delightful fusion of rustic charm and elegant flavor. The tender, flaky crust provides the perfect base for vibrant, halved purple plums that release their natural juices during baking. Topped with a velvety custard infused with a hint of rum and nutmeg, this dessert offers a luxurious contrast of textures. It is an ideal centerpiece for summer gatherings or a sophisticated end to a family dinner. The combination of sweet fruit and creamy custard creates a balanced, comforting dish that feels both homemade and refined.

Ingredients

Directions

  1. Mix the flour, salt, lemon rind, and 1 tablespoon sugar in a bowl.
  2. Cut in the margarine with two knives or a pastry blender until the mixture is crumbly.
  3. Work in the cold water with your hands until the dough is well blended and holds together.
  4. Chill the dough for 30 minutes.
  5. Preheat oven to 400°F (204°C).
  6. Press the dough into a 9-inch layer cake pan or a flan pan with a removable bottom, bringing the dough up the sides almost to the top and keeping the thickness even.
  7. Cut the plums in half and remove the pits.
  8. Place the plum halves, skin side down and slightly overlapping, in a circle to cover the dough completely.
  9. If the plums are very sweet, sprinkle lightly with additional sugar.
  10. Bake the tart for 20 minutes.
  11. Meanwhile, in a medium saucepan, heat the cream just until bubbles form around the edge.
  12. Beat together the eggs, egg yolk, 2 tablespoons sugar, and rum.
  13. Slowly add the egg mixture to the warm cream and cook over medium heat, stirring constantly, until the mixture thickens.
  14. Remove the tart from the oven and carefully pour the custard topping over the surface.
  15. Sprinkle with nutmeg and a little sugar.
  16. Place the tart back in the oven for 15-20 minutes until the topping is lightly browned and a knife inserted in the deepest part comes out clean.
