Cut the beef into 1/2-inch cubes.

Remove the casing from the sausage and cut the meat into 1-inch pieces.

Chop the garlic and parsley together until almost pureed.

If using dried mushrooms, soak them in 1/2 cup lukewarm water for 15 minutes, then drain, reserving the water, and chop. If using fresh mushrooms, slice them thinly.

Combine olive oil, butter, and salt pork in a large saucepan or Dutch oven and heat over medium heat.

Add the onions and saut slowly until medium brown.

Add the beef and sausage pieces and brown for 10 minutes, stirring occasionally.
