  1. Preheat the oven to 375&# 194;°F (190°C).
  2. Pat the whole chicken dry with paper towels inside and out.
  3. Stuff the chicken cavity with the chopped garlic and half of the rosemary leaves.

  5. Rub the remaining half of the olive oil over the outside of the chicken.

  8. Roast in the preheated oven for approximately 1 hour, turning and basting with pan juices every 15 minutes.

  10. Transfer the chicken to a warm platter and tent with foil to rest.
  11. Tilt the roasting pan and spoon off all but 1 tablespoon of fat.
  12. Place the pan on a stovetop burner over high heat.
  13. Add water to the hot pan and scrape up the browned cooking residue from the bottom.
  14. Pour the deglazed pan juices over the chicken before serving.
