Description

This authentic Pollo Criollo is a comforting, slow-cooked chicken dish marinated in tangy sour orange and aromatic spices. The chicken becomes incredibly tender as it simmers in a rich, flavorful sauce infused with garlic, cumin, and sherry. It’s a hearty main course perfect for family dinners or weekend gatherings, offering a balance of zesty citrus notes and deep, savory flavors. Simple ingredients come together to create a dish that feels both rustic and elegant, reminiscent of traditional farm-style cooking.

Ingredients

Directions

  1. Cut the chicken into quarters or serving pieces.
  2. Wash the chicken and pat it dry with paper towels.
  3. Season the chicken liberally with salt and pepper.
  4. In a mortar or bowl, crush the garlic into a paste with the cumin.
  5. Rub the garlic-cumin paste all over the chicken.
  6. Place the chicken in a non-reactive bowl and pour the sour orange juice over it.
  7. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.
  8. Remove the chicken from the marinade, reserving the marinade liquid, and pat the chicken dry.
  9. Heat the olive oil in a heavy-bottomed pan over medium heat.
  10. Brown the chicken pieces on all sides until golden.
  11. Add the reserved marinade, sherry, sliced onion, and chicken stock to the pan.
  12. Reduce the heat to low, cover the pan, and simmer until the chicken is fork-tender, about 35 to 45 minutes.
  13. Transfer the cooked chicken to a serving platter and keep warm.
  14. Strain the sauce through a colander into the same pan, discarding solids.
  15. If using, stir the flour into the sauce to thicken it.
  16. Cook the sauce over low heat, stirring frequently, until it thickens, about 5 to 6 minutes.
  17. Taste and adjust seasoning with salt and pepper if needed.
  18. Pour the thickened sauce over the chicken on the platter.
  19. Garnish with finely chopped fresh parsley before serving.
