Description

Recreate the famous crispy, juicy fried chicken at home with this simplified copycat recipe. The secret lies in the dry seasoning mix, combining self-rising flour, cornstarch for extra crunch, seasoned salt, paprika, and a packet of Italian salad dressing mix for that distinct savory kick. The chicken is double-dredged to ensure a thick, crunchy crust that stays intact while the meat cooks through. Perfect for game day parties, casual weeknight dinners, or satisfying a deep-fried craving.

Ingredients

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the self-rising flour, cornstarch, seasoned salt, paprika, baking soda, and the entire packet of Italian salad dressing mix. Mix well and set aside.
  3. In a separate shallow bowl, whisk together the eggs and cold water until blended.
  4. Fill a heavy-bottomed skillet or Dutch oven with about 1 inch of vegetable oil and heat over medium-high heat until the oil is hot (around 350°F / 177°C).
  5. Grease a 9x13-inch baking pan and set aside.
  6. Pat the chicken pieces dry with paper towels.
  7. Dip each chicken piece first into the dry flour mixture, ensuring it is fully coated.
  8. Shake off excess flour, then dip the chicken into the egg and water mixture.
  9. Return the chicken to the dry flour mixture, pressing firmly to adhere a thick, double layer of coating.
  10. Carefully place the coated chicken pieces into the hot oil, skin-side down. Do not crowd the pan; fry in batches if necessary.
  11. Fry for 3-4 minutes on the first side until golden brown.
  12. Flip the chicken pieces and fry the other side for another 3-4 minutes until golden brown.
  13. Remove the browned chicken from the oil and place it in the prepared baking pan in a single layer, skin-side up.
  14. Cover the pan loosely with aluminum foil, leaving one side open to allow steam to escape.
  15. Bake in the preheated oven for 35-40 minutes, or until the chicken is cooked through and tender.
  16. Remove the foil and bake for an additional 5 minutes to crisp up the coating.
  17. Let the chicken rest for 5 minutes before serving.
