Directions

  1. Preheat oven to 350ðF (175ðC).
  2. Cut the 5 medium peeled sweet potatoes into 1/2-inch thick slices.
  3. Core 6 apples but do not peel them; cut into 1/2-inch thick rings.
  4. Grease a 13x9x2-inch baking dish lightly with butter or cooking spray.
  5. Arrange the sweet potato slices in a single layer over the bottom of the prepared baking dish.
  6. Place half of the apple rings on top of the sweet potatoes.
  7. Season the sweet potatoes and apples with salt and pepper to taste.
  8. In a small bowl, whisk together 1/3 cup honey, 1/4 cup soy sauce, and 1/2 cup water.
  9. Pour the honey-soy mixture evenly over the sweet potatoes and apples.
  10. Bake in the preheated oven for 30 minutes.
  11. While the vegetables bake, season 6 pork chops with salt and pepper.
  12. Heat 1/2 tablespoon of butter or margarine in a skillet over medium-high heat.
  13. Brown the pork chops in the skillet for about 2-3 minutes per side, then remove from heat.
  14. Remove the baking dish from the oven.
  15. Arrange the browned pork chops on top of the partially cooked sweet potatoes and apples.
  16. Place the remaining apple rings on top of the pork chops.
  17. Baste the pork and apples with the pan juices from the bottom of the dish.
  18. Dot the top with the remaining 1/2 tablespoon of butter or margarine.
  19. Return to the oven and bake for 30 minutes longer, or until the pork chops are cooked through and the sweet potatoes are tender.

Note

Storage: Cover leftovers tightly and refrigerate for up to 3 days. Reheat in the oven or microwave until warm.

Substitutions: You can use regular russet potatoes instead of sweet potatoes, though the flavor will be less sweet. For a dairy-free option, use margarine or oil instead of butter.

Variations: Add sliced onions or carrots along with the sweet potatoes for extra nutrition and flavor. A sprinkle of fresh thyme or rosemary adds a nice herbal note.

Safety: Ensure pork chops reach an internal temperature of 145ðF (63ðC) for safe consumption.

Tip: For easier cleanup, line the baking dish with parchment paper before greasing.
