Ingredients

Directions

  1. Cover dried apricots with warm water and soak for at least 30 minutes, or until softened. Drain, reserving 1/4 cup of the soaking liquid.
  2. In a small bowl, mix brandy, 1 tablespoon oil, pepper, thyme, and garlic powder to create a marinade.
  3. Brush pork filets with the marinade on all sides and let them rest for 30 minutes at room temperature.
  4. Cook rice according to package instructions and keep warm.
  5. Heat remaining 1 tablespoon oil in a large skillet over medium-high heat.
  6. Fry marinated pork filets until browned on all sides, about 3-4 minutes per side. Remove meat from skillet and keep warm.
  7. In the same skillet, add drained apricots, reserved apricot juice, leftover marinade, and butter.
  8. Stir and simmer over medium heat until the sauce reduces slightly and thickens, about 5 minutes.
  9. Stir in heavy cream and simmer gently for another 2 minutes. Taste and adjust seasoning with salt and pepper if necessary.
  10. Slice pork filets and serve over cooked rice, topped with the apricot cream sauce.

Note

If pork filets are unavailable, pork tenderloin cut into medallions works well.

For a non-alcoholic version, substitute brandy with apple juice or chicken broth.

The apricots can be soaked overnight in the refrigerator for softer texture.

Serve immediately for best texture of the pork and sauce.
