This Pork Chili with Artichoke is a comforting, one-pot meal that balances rich, savory pork with the distinct tang of artichoke hearts and creamy cannellini beans. Unlike traditional red chilis, this version uses a lighter broth base enhanced with white wine and fresh herbs, resulting in a dish that is both hearty and sophisticated. The stew meat breaks down into tender chunks, absorbing the flavors of thyme, basil, and cumin as it simmers. It’s an excellent choice for cooler evenings or when you want a satisfying main course that feels homemade. Serve it over crusty bread or with rice to soak up the delicious, herb-infused broth.
