Directions
-
Soak 18 bamboo skewers in water for at least 1 hour to prevent burning while grilling.
-
In a food processor or blender, combine the chopped onion, ginger, garlic, dried red chili, Chinese chili sauce, lime rind and juice, soy sauce, brown sugar, and vegetable oil. Puree until smooth.
-
Pour the marinade into a bowl. Cut the pork tenderloin into 6-inch lengths, then slice each length into 1/2-inch wide strips.
-
Thread the pork strips onto the soaked bamboo skewers. Pour the marinade over the skewers, ensuring they are well coated. Cover and refrigerate for at least 2 hours.
-
Preheat a grill or broiler. Grill the pork satays for about 2 minutes on each side, or until cooked through and lightly charred.
-
To make the Peanut Lime Sauce, place the peanut butter in a small bowl. Slowly whisk in the soy sauce, fresh lime juice, rice vinegar, brown sugar, and Chinese chili sauce (or chili flakes) until smooth.
-
Garnish the sauce with the chopped coriander. Serve the hot satays immediately with the dipping sauce.
