Ingredients

Directions

  1. Rinse the dried split peas under cold water and place them in a large pot with 6 cups of water.
  2. Cover and let the peas soak for at least 1 hour, or overnight for softer peas.
  3. Drain the soaking water and return the peas to the pot.
  4. Add the ham hock, diced onion, diced carrot, diced potato, and the remaining 6 cups of fresh water.
  5. Bring the mixture to a boil over high heat.
  6. Reduce the heat to low, cover, and simmer for 45 minutes to 1 hour, or until the peas are tender and the ham is falling off the bone.
  7. Remove the ham hock, shred the meat, discard the bone and skin, and return the meat to the pot.
  8. Stir in the broken spaghetti noodles and simmer for an additional 10-12 minutes until the noodles are cooked through.
  9. Taste and season with salt and pepper if needed, keeping in mind the saltiness of the ham.
  10. Ladle into bowls and serve hot.
