Pork Spareribs In Black Bean Sauce
Description
This classic Chinese-style dish features tender pork spareribs slow-braised in a deeply savory sauce made with fermented black beans, oyster sauce, and soy. The ribs become fork-tender as they absorb the complex, salty-sweet flavors of the sauce. The fermented black beans provide a distinctive pungent kick that pairs beautifully with the richness of the pork fat. It is a comforting, hearty meal that shines when served over steamed white rice.Ingredients

-
Wash the black beans thoroughly two times and drain well.
-
Crush the black beans slightly with the handle of a cleaver or chop them very finely with a sharp knife.
-
Heat oil in a wok or large heavy-bottomed pan over medium-high heat.
-
Add the crushed garlic and drained spareribs to the hot wok.
-

-
Add the black bean mixture, chicken stock, salt, sugar, soy sauce, oyster sauce, and scallions.
-
Bring the mixture to a fast boil, then reduce heat to medium.
-
Cover the wok and simmer for 40 minutes until the ribs are tender.
-
In a small bowl, mix cornstarch with 4 tablespoons of cold water to create a slurry.
-
Stir the cornstarch slurry into the rib mixture.
-
Bring the sauce back to a boil and stir until it thickens and coats the ribs.
-
Remove from heat and serve immediately.
